A Taste of History

The American Breese (often called “Bresse” in France) traces its roots to one of the world’s most celebrated chickens: the Bresse of France, prized for centuries for its deep flavor, tender texture, and unique ability to thrive on pasture. Known as the “Queen of Chickens,” French Bresse is so iconic that its name is protected by an AOC designation—similar to Champagne wine or Roquefort cheese. Only birds raised in the Bresse region of France can bear the original name.

The American Breese was developed by breeders in the United States who worked carefully to maintain the same high standards—white plumage, bright red comb, blue legs, and rich, flavorful meat—while selecting for performance under American farming conditions. Like its French ancestor, the breed is dual-purpose, valued both for exquisite table quality and steady egg production.


The American Breese traces its lineage to one of the most prestigious chickens in the world — the Poulet de Bresse of France. For centuries, Poulet de Bresse has been celebrated for its extraordinary flavor and tenderness, earning it a protected AOC designation (Appellation d’Origine Contrôlée), just like fine wines or cheeses. Only birds raised in the Bresse region of France under strict standards can carry that name.

Flavor You Can’t Replicate

Breese meat is unlike any commercial chicken you’ve ever tasted. The meat is rich, buttery, and deeply savory, with a texture more akin to fine poultry game than mass-produced broilers. The natural marbling and fine muscle fiber come from slow, steady growth and pasture-based movement, not confinement or rapid fattening.

Unlike Cornish Cross broilers, which reach slaughter weight in as little as six weeks, Breese take their time—growing naturally and building muscle as they forage. The result is not just meat—it’s flavor that tells the story of how the bird lived.

Our Farm’s Breese Journey

Earlier this year, we made the decision to step away from the post office dependency and the industrial Cornish Cross model. Shipping delays, inconsistent chick quality, and the lack of resilience in fast-growing broilers pushed us to make a change.

At Stellar Game Birds, we already raise a variety of dual-purpose heritage breeds for exhibition, meat, and eggs. Transitioning to Breese was a natural next step in our regenerative journey. Over the past eight months, we’ve added two non-hatchery Breese lines to our farm. We’ve culled religiously—selecting only the strongest, healthiest, and best-foraging birds to carry the line forward.


The American Breese retains the same iconic tricolor symbolism that made the French Bresse famous: white feathers, red comb, and blue legs and feet—mirroring the colors of the French flag. Those signature blue feet aren’t just cosmetic; they reflect pure breeding and are a mark of authenticity among enthusiasts. Combined with their calm temperament and excellent foraging instincts, the Breese truly stand apart as a heritage bird built for both beauty and utility.

Every generation grows hardier, better suited to Florida’s climate, and truer to the heritage standard. Today, we can proudly say: this flock is ours.

How We Raise and Finish Breese

Our Breese are raised on pasture, with access to sunshine, fresh air, and space to move. They forage daily on grass, bugs, and seeds, supplemented with a custom feed blend designed for slow growth and nutrient balance.

As they mature, we finish them on whole grains, fermented feed, and fresh milk—a nod to traditional French methods that enhance both texture and flavor. This finishing period adds a fine layer of fat that bastes the meat from within during cooking, producing the signature juicy, buttery bite Breese are famous for.

Every harvest honors the bird. We process in small batches for local markets, ensuring respect and quality in every step from field to table.
